Smoked Scallops

Bacon-wrapped smoked scallops are an indulgent appetizer that's always impressive. The sweetness of the scallops, the smoky bacon, and a drizzle of butter create something magical. They disappear fast at any gathering.

These are perfect for elegant appetizers, cocktail parties, or as a special first course. They're rich enough that a few per person is plenty.

Serve immediately with lemon butter drizzled over the top. Fresh chives add color and mild onion flavor. A squeeze of lemon brightens everything. Keep accompaniments simple.

Use dry-packed scallops if possible - they're not treated with phosphates so they brown better. Large sea scallops are easiest to work with. Pat very dry before wrapping.

The bacon should be partially cooked before wrapping so it crisps properly while the scallops cook through. Secure with toothpicks. The scallops are done when the bacon is crisp and the scallops are opaque.

    Wrap each large sea scallop with a strip of bacon, securing with a toothpick through the center.

    Set your smoker to 275°F with Bear Mountain Apple Pellets for a light smoke.

    Place the bacon-wrapped scallops on the smoker grate and smoke for 30-45 minutes.

    The scallops are done when the bacon is crispy and the scallops are firm and opaque inside.
