Smoked Pork Belly Bites

Pork belly bites - sometimes called pork belly burnt ends - are absolutely addictive. These sweet, savory, slightly caramelized cubes of smoky pork are the kind of thing that people gather around, unable to stop reaching for "just one more." They're meat candy in the best possible way.

Perfect as an appetizer for dinner parties, game day gatherings, or BBQ cookouts where you want something special. They're also incredible as a main course served over rice or mashed potatoes. Fair warning: they disappear fast, so make plenty.

Serve with toothpicks as an appetizer, or pile over creamy mashed potatoes or grits for a decadent main course. They're amazing in fried rice, on top of ramen, or tucked into steamed bao buns. A tangy Asian slaw makes a great accompaniment to cut through the richness.

Experiment with different glazes - teriyaki for Asian flair, maple-bourbon for sweetness, or spicy honey for heat. Try different rubs too - Chinese five-spice works beautifully, as does a coffee-based rub. Some folks prefer minimal seasoning to let the pork belly flavor shine.

Cut the pork belly into uniform pieces for even cooking. The two-stage smoking process is essential - the first stage renders fat and develops bark, while the second stage caramelizes the glaze. Toss in sauce during the second stage and let them cook uncovered for the stickiest, most caramelized results.

    Arrange in single layer on smoker.

    Smoke at 275°F for 2 hours.

    Transfer to aluminum pan.

    Add butter, brown sugar, and honey.

    Cover and smoke 45 minutes.

    Cook until internal temp reaches 200°F and cubes are caramelized (about 15 more minutes). Use an instant-read thermometer for accuracy.
