If you don't have leftover smoked chicken, smoke 2 chicken breasts at 250°F until the internal temperature reaches 165°F, then shred or dice.

Saute sliced bell peppers and onions in a skillet over medium heat until softened and slightly charred.

Lay a flour tortilla flat. Spread shredded Mexican-blend cheese over half, then add smoked chicken and the sauteed peppers and onions. Fold the tortilla in half.

Cook the quesadilla on a hot grill or skillet for about 2-3 minutes per side until the tortilla is golden and crispy and the cheese is melted.
