This is perfect for a light lunch or dinner, meal prep, or when you want something satisfying but not heavy. It's an easy way to make leftovers feel like a proper meal.
Classic Caesar components are key - crisp romaine, creamy dressing, shaved Parmesan, crunchy croutons. Add-ins like cherry tomatoes, avocado, or bacon can customize it. Anchovy lovers can add extra to the dressing.
A good Caesar dressing makes or breaks this salad. Homemade is best but quality bottled works. Make sure there's enough dressing to coat everything without drowning it.
Slice the smoked chicken while still slightly warm for the best texture. Arrange on top of the salad rather than mixing in for better presentation. Add croutons just before serving for maximum crunch.

Season the chicken breasts with salt, pepper, and a light coating of Plowboys Yardbird Rub.

Smoke at 250°F with Bear Mountain Apple Pellets for 1-1.5 hours until the internal temperature reaches 165°F. Verify with an instant-read thermometer.

Let the chicken cool slightly, then slice it into strips.

Chop crisp romaine lettuce and place it in a large bowl. Toss with Caesar dressing until evenly coated.

Plate the dressed romaine and top with sliced smoked chicken, freshly shaved Parmesan cheese, crunchy croutons, and a squeeze of lemon.
