Smoked Burgers

Once you've had a smoked burger, regular grilled burgers just don't hit the same. The smoke penetrates the meat completely, adding a depth of flavor that transforms a simple burger into something special. These are the burgers I make when I want to elevate backyard BBQ.

Smoked burgers are perfect for casual gatherings where you want something familiar but better. Backyard cookouts, game day, weekend hangouts with friends - any occasion where burgers are appropriate, smoked burgers are even more appropriate.

Classic burger toppings work great here - lettuce, tomato, onion, pickles, your favorite cheese. But the smoky meat also pairs beautifully with bolder toppings: blue cheese, caramelized onions, bacon jam, jalapeños. Don't forget good quality buns, lightly toasted. Fries or onion rings on the side.

For variations, try mixing in different seasonings - Worcestershire, garlic powder, a little mustard powder. Stuffed burgers with cheese inside are incredible smoked. You can also mix in diced bacon or jalapeños to the patty itself.

The key is smoking at a lower temp to build that smoke flavor, then finishing with a quick sear on high heat for that crust. Don't press down on the patties - you'll lose all those delicious juices. Let them rest briefly before serving.

Ingredients

Instructions

  1. 1

Form the ground beef into 6 patties about 3/4 inch thick. Make a shallow dimple in the center of each one with your thumb — this prevents the burgers from puffing up during cooking.

  2. 2

Season both sides generously with salt, pepper, and garlic powder. For a next-level crust, try Hardcore Carnivore Black.

  3. 3

Set your smoker to 250°F with hickory wood chunks for a smoky backbone.

  4. 4

Place the patties on the smoker grate and smoke for about 45 minutes to build deep smoke flavor.

  5. 5

Check the internal temperature with an instant-read thermometer — pull at 150°F if you plan to sear, as the sear will add a few degrees. For well-done, go to 160°F.

  6. 6

For the best results, finish the burgers with a quick sear on a screaming-hot grill or cast iron skillet for about 45 seconds per side. Add cheese during the sear if desired.

  7. 7

Toast the buns on the grill, assemble with your favorite toppings, and serve immediately.
